Those with a sweet tooth will enjoy Santanera’s strawberry and white chocolate granita, which is inspired by a traditional Colombian street food dessert called fresas con crema normally sold on the streets of Bogota on the weekends.
“At Santanera we have tweaked this dessert by creating a fresh textural dessert of compressed watermelon, white chocolate ganache, strawberry granita, and a milk sorbet,” said Andres.
Santanera’s menu is based on what’s in season in Bali as the masterminds in the kitchen try and elaborate dishes based on the best products available while constantly working on improving and refining the current menu.
