With great pleasure and excitement, Sofitel Bali Nusa Dua Beach Resort introduces Patrizia Battolu as the Head Chef of Cucina restaurant. Chef Patrizia’s passion for travelling and culinary has led her to travel and pursue a career in the culinary industry for more than 4 decades to date. Chef Patrizia is excited to lead the team of artisans in Cucina to continue exploring authentic Italian Mediterranean cuisines while adapting to the local culture and taste buds.
Chef Patrizia has been refining her cooking skills since she was 14 years old. Her sense of curiosity has fuelled the journey of discovering new ingredients and local flavours from around the world. For instance, her favourite tropical fruit is Mangosteen, which she discovered back in Rome simply out of curiosity. She loves exploring traditional markets as she believes it is the best way to learn about the people, the way of living & discover new ingredients.
Subsequently, her passion and curiosity led her to learn more about why people are having food restrictions and to explore the best ways to accommodate these different preferences and needs.
The fact that she is originally from South Italy is aligned with the concept of Cucina which serves Italian-Mediterranean cuisines and interior design that is inspired by the invigorating natural scenery of Amalfi on the southwest coast of Italy.
Moreover, having Chef Patrizia as a woman in a leadership position is aligned with Accor’s commitment to a more inclusive and diverse workplace. Her primary objectives are to lead and inspire the team to be creative and innovative in serving guests with a vast selection of fine delicacies starring fresh local ingredients and authentic Italian flavours. Ultimately, it is her belief that the key element in Italian food is the locally sourced ingredients that need to be fresh and of good quality.
Finally, getting to know Chef Patrizia more personally, she is known as a caring, passionate and energetic person. In her spare time, she enjoys reading books, travel and she is an art enthusiast. Interestingly, she could determine the standard and quality of the food to be served by looking at the consistency and by smelling it. She has a very sensitive sense of smell which has become her guide on whether flavour adjustment is needed especially during busy operations as she would not have to taste everything.
