The 12 Executive Chefs who collaborated on this event included Firmansyah, Richard Tanmelay & Eko Widianto from Royal Malioboro by Aston, Anas Harsanto from Harper Malioboro, Arif Suryadi from The Alana Malioboro, Budi Wijaya from The Alana Hotel & Convention Yogyakarta, Gunawan from favehotel Kusumanegara, Dedi Suseno from favehotel Malioboro, Aris Sanongko from favehotel Solo, Agus Supriyanto from Aston Solo and Muhammad Firman from The Alana Hotel Solo.
On this special occasion, these Executive Chefs are showcased a delightful array of regional delicacies from across the Indonesia Archipelago. The diverse menu offerings include East Nusa Tenggara, Lombok, Bali, East Java, Central Java & Yogyakarta, West Java, Sumatera, and other regions in Indonesia.
“The 12 Executive Chefs will present a variety of regional dishes from the Indonesian archipelago. Among them are the signature dishes from various regions within the archipelago. These include dishes from East Nusa Tenggara such as Sambal Teri NTT, Sei Sapi, and Kolo. From Lombok, we have dishes like Ayam Taliwang, Sayur Ares, Nasi Balap Puyung, and Sambal Beberuk.
Bali will bring Ayam Pelalah, Ayam Betutu, Sate Lilit, Kambing Guling Bumbu Bali, while East Java offers Rawon Surabaya, Bakwan Malang, Pecel Madiun, and more. Central Java and Yogyakarta will showcase Nasi Liwet Solo, Sate Klathak, Bakmi Jawa, Nasi Goreng Magelangan, and so on.
“Not to be forgotten are the culinary delights from West Java, Sumatra, Kalimantan, Sulawesi, and Aceh. In addition to the archipelago’s signature dishes, this event also features several appetizers and desserts,” says Chef Denny Frederick, the Corporate Executive Chef of Archipelago International.
