A New Cookbook Honoring the Culinary Traditions of Liguria, Italy

This book beautifully explores the rich culinary heritage of Liguria, taking readers on a journey through the region’s flavors and landscapes along the stunning Italian Riviera.

Apartamento and Belmond are thrilled to announce the release of Liguria: Recipes & Wanderings Along the Italian Riviera. This cookbook and photo essay is the first of a new series, Recipes & Wanderings, that melds the vibrant traditions of regional cuisines from around the world with artistic perspectives from renowned photographers and writers. 

Liguria: Recipes & Wanderings Along the Italian Riviera features stunning photography by Laura Jane Coulson, offering readers a visual journey through Liguria’s beautiful landscapes. Complementing the imagery are essays by celebrated writers and chefs Luca Cesari, Andy Baraghani, and Gilda Bruno, lending historical context to the volume’s stunning views. 

Woven in with the texts are 22 recipes by Chef Corrado Corti who has run the kitchens at Splendido since 1999, alongside two guest recipes by past Apartamento contributors Max Rocha and Fanny Singer, and an introduction by Ruth Rogers, each sharing insights into their personal relationship with this region’s rich cultural and culinary heritage. 

The cookbook delves into the heart of Ligurian cuisine, presenting authentic recipes inspired by the kitchens of Splendido and Splendido Mare, both Belmond Hotels in Portofino; from the aromatic Pesto Genovese and classic Focaccia Genovese to the refreshing Portofino Spritz, each recipe is a testament to the region’s gastronomic excellence and commitment to local sourcing. 

The book explores core contributors to the region’s culinary community, such as La Portofinese Eco-Farm and the historic Antica Confetteria shop, which not only provide Belmond’s Splendido and Splendido Mare hotels with delicious products, but are unique to Liguria’s history. Here, the chefs are committed to drawing from the surrounding land, treasuring the famous Genovese basil grown on the hills of Prà, which is also featured in the book and found across every menu in the hotels, from breakfast, lunch, and dinner. 

Embracing a community-driven approach, Liguria brings together a range of voices to present a multifaceted view of the Italian Riviera and aims to create a deeper connection with the culinary traditions and stories of Liguria.
