Sergio Herman Opens Le Pristine Singapore, a Genre-Crossing Restaurant Where Food, Fashion, Art, Music, and Design Merge 

The menu offers a showcase of signature dishes that embody the essence of New Italian cuisine, while also introducing local inflections inspired by Singapore’s vibrant culinary landscape. Guests can expect a cuisine that resonates with deep, robust flavours and innovative combinations, designed to both comfort and surprise the palate. Both à la carte and tasting menus are available. 

For starters, highlights include the Cannelloni Mussels, where tender Zeeland mussels are wrapped in delicate pasta, perfectly showcasing Chef Sergio’s skill in pairing the clean flavours of his homeland with the elegance of Italian cuisine.

Another standout, the Lobster Salad, combines the natural sweetness of fresh lobster with creamy stracchino cheese, cherries, and the richness of Vacche Rosse parmesan, all balanced by a cherry vinaigrette. 

A must-try, the Le Pristine Signature Seafood Orecchiette, a signature at all Le Pristine locations, blends the deep, savoury notes of mussel, squid, and langoustine with housemade orecchiette and a rich nduja sauce — a perfect harmony of familiar and bold flavours.

Meanwhile the Pizzette King Chilli Crab is a Le Pristine Singapore exclusive not to be missed. Here, tender Alaskan king crab meat is paired with the bold, familiar taste of Singaporean chilli crab served atop a fluffy mini pizza base. Courgette lends a refreshing, light texture, while pistou, a sauce made with basil, garlic, and olive oil balances the richness. 

For dessert, the Housemade à la minute Vanilla Ice Cream brings a playful twist on an all-time favourite. Made fresh to order, the vanilla ice cream is finished tableside with caramelised pistachios, hazelnuts, and chocolate sauce, evoking a joyful childhood memory.

A Creative Universe 

Japanese design firm NAO Taniyama & Associates has transformed the former mezza9 space into a sleek, moody playground. The space features art by established Dutch artists, including Sabine Marcelis, Maarten Baas, and Rotganzen, strategically placed at key focal points. Additionally, the associates are dressed in uniforms designed by the Danish-Italian firm OLDER.
