A Culinary Journey Curated by Five Chefs of Marriott International Indonesia
Marriott Bonvoy proudly announces the launch of Loka Rasa 2025, following its successful run over the past two years. This Indonesian culinary celebration spans over 70 participating restaurants from Marriott Bonvoy’s portfolio across the country.
This year, Loka Rasa – which means “World of Flavors” – highlights Indonesia’s rich culinary heritage, with an exquisite selection of 11 regional delicacies by five selected Chefs of Marriott International in Indonesia.

Honoring its commitment to authenticity, Loka Rasa returns for its third year, continuing its mission to showcase Indonesia’s rich culinary heritage to the world. In collaboration with Wonderful Indonesia, this year’s edition brings generations-old recipes and diverse regional flavors to the forefront.
Guests can experience a vibrant selection of Loka Rasa dishes, thoughtfully curated and served throughout the year, celebrating the nation’s culinary legacy on a global stage.




The Westin Resort Nusa Dua, Bali
Marriott Bonvoy members can earn and redeem points while savoring Loka Rasa’s signature dishes at participating restaurants across Indonesia.
Embark on a journey of taste through Indonesia’s legendary dishes with Chef Yandri Lubis from Four Points by Sheraton Surabaya, Pakuwon Indah, who presents Beef Rendang, an iconic Indonesian dish renowned for its rich and aromatic spices.
Often enjoyed as a celebratory meal or the centerpiece for special occasions, this dish features tender beef slow-cooked to perfection, ensuring each bite is infused with layers of flavors.
Reflecting the vibrant spirit of Indonesian cuisine, his creation also includes Soto Betawi, a signature Jakarta dish with tender beef brisket, beef lung, and beef tripe in a creamy coconut milk-based broth, served with traditional condiments like sambal soto, sweet soy sauce, sliced lime, and bitter crackers–emping that enhance its robust flavors.
Chef Roy Sanjaya of The Laguna, a Luxury Collection Resort & Spa, Nusa Dua, Bali, highlights the culinary treasure from the island, introducing Ayam Betutu, a marinated chicken infused deeply into the sauce and often gracing ceremonies and festive occasions as a symbol of heritage and communal celebration.
Chef Roy also presents Sate Lilit, an iconic dish and a unique take on Indonesian satay, where seasoned minced meat is wrapped around lemongrass stalks or bamboo skewers, creating an aromatic and flavorful delight.
Both dishes are crafted using Bumbu Basa Gede, a signature spice paste that celebrates the intricate blend of spices and bold flavors of a quintessential Balinese delicacy.
Chef Toni Azhari from Lampung Marriott & Spa presents Ayam Garang Asam, a perfectly steamed dish wrapped in banana leaves, balancing tangy and savory flavors.
His Tongseng Kambing offers a rich, aromatic experience with tender lamb simmered in spiced coconut milk, complemented by cabbage, tomatoes, and bird’s eye chilies. Traditionally served with rice, his dishes provide a comforting and satisfying dining experience.
From Ta’aktana, a Luxury Collection Resort and Spa, Labuan Bajo, Chef Simon Siswono presents Sate Padang, a renowned dish from West Sumatra. Tender skewers of marinated beef are coated in a savory sauce made with rice flour, turmeric, garlic, and other spices, typically served with rice cakes (ketupat) and topped with crispy fried shallots.

His extended menu also features Soto Banjar, a traditional South Kalimantan chicken soup celebrated for its spiced broth and creamy texture, offering a comforting and delicious taste.
Chef Michael Leuwol of The Westin Resort Nusa Dua, Bali, presents a delightful selection of Indonesian desserts, celebrating the country’s rich culinary heritage. His creations include Bubur Sumsum, a comforting sweet coconut rice porridge; Klappertaart, a Dutch-inspired coconut custard from Manado, North Sulawesi; and Es Doger, a refreshing coconut milk-based icy treat with sweetened condensed milk and vibrant toppings—perfect for a tropical indulgence.
