JIA, the contemporary Chinese restaurant at Shangri-La Hotel, Jakarta, will present the uniquely aromatic flavours of Sichuan cuisine from 22 to 25 March 2018. Food lovers will revel in the Sichuanese cooking by guest chef Rick Du of Shangri-La Hotel, Senyang, in collaboration with JIA’s culinary team.
Sichuan cuisine has a combination sour, pungent, hot, sweet, bitter, aromatic and salty taste. Authentic Sichuan food must consist of a vast variety spices to produce the unique intense flavours, aroma and “tingly-numbing” (麻; má) sensation in the mouth. Some of Sichuan food’s essential ingredients include green and red Sichuan pepper, black pepper, chilli, broad bean chilli paste, shallots, ginger and garlic.
A bountiful special menu of authentic dishes will include Sichuan Sesame Spare Ribs with Sweet and Sour Sauce, Sichuan Pepper Beef Tendon, Abalone Mushroom in Fragrant Spicy Roast Sauce, Sichuan Stewed Beef Brisket with Spicy Dumpling and Chilled Spring Water Okra.
For seafood enthusiasts, the must-try items are Sichuan Hot and Sour Soup with Fish Maw, Sichuan Style Grouper Fish Soup, Sichuan Braised Shrimp Balls with Chilli and Vegetables and Baked Cod Fish with Sichuan Pepper and Onion.

The Sichuan dishes will be available in the a la carte menu for lunch from 11:30 a.m. to 2:30 p.m. and for dinner from 6 to 10:30 p.m.
